The weather is starting to change so I decided to cut my basil plant back and preserve the leaves. I remembered reading about putting the basil in ice cube trays and pouring olive oil over them, so I snipped away and filled this tray. Next, I added the oil and then used a spoon to make sure the basil snips were immersed in the oil. I put the tray in the freezer, and once the oil was solid, dumped the cubes out and put them into a freezer bag so I can use the tray again. Now they’re ready to use in my next batch of lasagna or spaghetti. So easy and will be so appreciated when my plant isn’t producing this winter.
