Swedish Pineapple Cake

This is one of my favorites.  I couldn’t wait to make it for my sister, but as soon as she saw the recipe, she said it was one that her mother-in-law used to make.

Swedish Pineapple Cake

2 cups flour
2 cups sugar
1 t soda
¼ t salt
2 beaten eggs
1 – 20 oz crushed pineapple with liquid
1 T vanilla

Mix dry ingredients together, then add the rest. Mix with spoon. Bake 350 degrees 20-25 minutes in un-greased jelly roll pan. (‘until loosens from edges of pan).

Ice while hot with:

1-8 oz package of cream cheese
1 stick of butter or margarine
13/4 cup sifted powdered sugar
1 t vanilla

Whip with mixer.

Stir in 1 cup chopped nuts. (pecans) (optional – I never add the nuts)

**** Frost while HOT!
